Da Haaf manager plans local fare
A new manager has been appointed at Da Haaf Restaurant in Scalloway, in a bid to revitalise the eatery based at the NAFC Marine Centre.
Vicki Mordue, originally from York, qualified as a trained chef 21 years ago and has worked for a number of restaurant and pub chains, as well as working in corporate hospitality for British Airways.
She said: “Part of my role will be to build up the conference side of the business, providing a catering service for meetings and events. As well as this, we’re going to extend the opening hours during the summer to include two or three evenings per week. From there, we hope to continue with evening opening throughout the year.
“I also plan to refresh the menu to include as much local produce as possible. As well as sourcing fresh local fish, we want to include other local ingredients in our dishes. I’m also keen to introduce organic and sustainable produce to give people a wholesome, fresh taste of Shetland.
“Look out for more unusual products too – at the moment we’re trialling a range of deep-fried ice cream, definitely a dessert not to be missed.”
